What is matcha?

How to Make Matcha Ice Cream
Ingredients:

400 ml heavy cream (35% fat)

200 ml whole milk

120 g sugar (or honey/agave syrup)

3 tsp matcha powder (sifted)

½ tsp vanilla extract

1 pinch of salt
Optional:
1 tsp sake for a smoother texture
- Crushed cookies or white chocolate chips
Instructions
With an ice cream maker:
1. Heat the milk, sugar, vanilla, and salt in a saucepan without bringing to a boil.
2. Stir over low heat until slightly thickened.
3. Remove from heat and add the cream and sifted matcha powder.
4. Blend well with an immersion blender for a smooth texture.
5. Chill the mixture in the fridge for 4–6 hours, then churn in your ice cream maker according to its instructions.

Without an ice cream maker:
1. Prepare the mixture as above.
2. Once cooled, pour it into a bowl or container and place it in the freezer.
3. For the first 3 hours, stir vigorously every 30–40 minutes using a fork or hand blender for a creamier texture.
Vegan version: Replace cream and milk with plant-based alternatives (e.g. coconut milk + oat cream).
Serving ideas: Top with fresh fruit, mint leaves, or serve in a crispy cone.
