The largest tea research center in India is in Jorhat, the second largest city of Assam. The center started its operations in 1911 and since then has made a significant contribution to increasing the production, productivity and quality of tea in the Assam region.

For the quality of the leaves and extract of Assam and Darjeeling teas, an international nomenclature has been established with the following initials: S, F, T, G, F, O, P, which mean:
The S, initial of the word supreme (excellent) identifies the color and the extract.

The initials F, T, G, stand for F, fancy (very nice, fantastic) T, tippy (from tops) G, golden and identify the quality of the leaves collected. That is, the top, the leaf that has not yet opened is covered with a golden or silver fluff.

F, flowery (fragrant) identifies the characteristically strong aroma it has.

The initials O, orange (orange) and P, pekoe (leaf) identify the second and third leaves which are also very tender and have an amber color

The ideal water temperature is between 90-100°C.

For proper extraction, the tea must remain in the water for 3-5 minutes.
