Classic Jasmine tea. Mild taste, light colored extract.
Jasmine tea is said to have become very popular in China during the Song Dynasty.
As dusk falls, the jasmine flowers open and release their intoxicating fragrance. So they pick them in the morning when they are still fresh and closed and keep them in a very cool place until nightfall. At this very moment, they are mixed with the freshly cut tea leaves, which have been preheated, to better absorb the scent of the jasmines. After a few hours the tea leaves are reheated a second time. To ensure full absorption of the aroma, workers with special wooden tools beat the tea leaves mixing them with the jasmine petals. This way, more aromas are released and absorbed better. This process is repeated four to five times. The tea is reheated to evaporate the moisture from the flowers and prevent mold.
